Fruity omelette
Handful of fresh Strawberries
1 Peach
1 Mango
1 tsp Honey
1 Egg
1 tsp Olive oil
A splash of fresh lemon juice
A dash of salt

Step 1: Combine the fruit with the honey and lemon juice. Stir gently and set aside for 10 minutes.
Step 2: In a medium bowl whisk together the eggs. Heat the olive oil and pour in eggs. Spread evenly in pan, cover, reduce heat to very low, and cook until golden on bottom and set on top, 3 to 4 minutes.
Step 3: Place the fruit mixture down the center of the omelet and use a spatula to fold in half. Continue to cook covered for 1 minute and then carefully transfer to a plate
Step 4: Serve immediately.
Serves 1 - but can be scaled up to share with loved ones
Chicken lettuce wraps
1 Skinless chicken breast
1 Stalk spring onion
1 Clove fresh garlic
1 tbsp Canola oil
1 tsp Sesame oil
1 tbsp Hoisin sauce
1 tsp Rice vinegar
1 Thin slice of red onion
1 tbsp Coriander leaf (fresh)
3 Fresh mushrooms
2 Large Lettuce leaves

Step 1: Mince breast and garlic.
Step 2 Chop scallions, onion, cilantro and mushrooms.
Step 3: In a medium skillet combine chicken, scallions, garlic, canola oil, sesame oil, rice vinegar, hoisin sauce and seasoning.
Step 4: Cook over medium-low heat for 15 minutes, stirring several times. Assemble the lettuce wraps as desired and serve.
